Recipe for pear cake

Our pear cake is a dessert with a light, airy baked dough. We created the recipe with pears, but of course you can also use apples or other seasonal fruit.

The dough is a simple recipe and the pears are placed on top of it in a disc shape. Any other fruit that can be baked in the oven is fine, except for pears.

Our recipe makes about 4 servings. If you are expecting guests, increase the stated amounts proportionally.

  • 2 large, ripe pears
  • 2 eggs (60 g)
  • ½ cup apple puree (100 g)
  • ½ cup of Greek yogurt (100 g)
  • 2 spoons of rice flour (30 g)
  • ½ cup of brown sugar (100 g)
  • 3 spoons of ground almonds (45 g)
  • Juice of one lemon
  • ground cinnamon (depending on taste)
  • 1 pinch of salt

preparation

  1. First preheat the oven to 180 ° C.
  2. Then grease a medium-sized oven dish or use oven paper. If you prefer to use individual shapes to get individual portions, then that is of course also possible.
  3. Peel the pears, then remove the casing and cut them into thin slices. In the following, drizzle a little lemon juice over them so that they don’t turn brown. In the meantime, keep them in a bowl.
  4. Then separate the eggs.
  5. Mix the yogurt, egg yolks, sugar, and apple puree in a bowl. Make sure to mix the ingredients together until you get a uniform dough. 
  6. Then add the ground almonds, rice flour and salt to this mixture. Stir again until the batter is uniform and without lumps. 
  7. Then use the beater to beat the egg whites until stiff.
  8. Then carefully stir it into the dough so that it becomes looser.
  9. Then put the dough in the pre-greased dish and place the pear slices on top. Press them in lightly so that they adhere nicely.
  10. Finally, dust the pear cake with a little icing sugar and cinnamon.
  11. Now put it in the oven for about 40 minutes.  Wait until it’s baked golden brown.
  12. Let the pear cake cool now and serve it for dessert.

This dessert is low in calories and is a really light treat. You can serve the pear cake with an iced tea or a hot fruit tea.
