1. Recipe for vegetable soup

ingredients

  • 1.5 cups of chicken broth
  • 320 g tomato juice
  • 230 ml of water
  • 1 large, peeled and sliced ​​potato
  • 2 peeled and sliced ​​carrots
  • 400 g canned tomatoes with the juice
  • 2 sliced ​​celery stalks
  • 100 g green beans
  • 150 g of tender corn
  • Soup cubes
  • Salt and pepper as desired

Prepare all the ingredients and then put them in a large saucepan. Season with salt and pepper and then cook until the vegetables are soft (about half an hour).

2. Recipe for vegetable soup

You may remember grandma’s recipe for vegetable soup. You can easily cook it yourself.

ingredients

  • 1 tomato
  • 3 cloves of garlic
  • 1 teaspoon sweet paprika powder
  • 3 spoons of extra virgin olive oil
  • 1 large onion
  • 2 carrots
  • 50 g celery
  • 50 g beets
  • 1/4 white cabbage
  • 50 g leek
  • Salt and pepper as desired
  • 2 spoons of chopped parsley
  • 1 sprig of coriander
  • nutmeg

Wash all vegetables well and then peel them if necessary. You can also use other vegetables for variety:  For example, use pumpkin, beans, cauliflower, fennel, kale or other other seasonal vegetables.

Cut all the vegetables except the tomatoes into small strips. Wash and chop the parsley and garlic. Cut the tomatoes into cubes.

Then you put some oil in a large saucepan and roast the garlic until golden brown. Then add the cut vegetables (except tomatoes and parsley).

After 2 to 3 minutes add the water and tomatoes and cook everything for half an hour. Finally season and serve with parsley.

3. Recipe for vegetable soup

This recipe can replace an entire meal because we also use chicken for it. It is intended for 6 people.

ingredients

  • 2 tablespoons oil
  • 2 peeled cucumbers cut into strips
  • 3 peeled carrots cut into strips
  • 3 peeled garlic cloves
  • 1 medium-sized, finely chopped onion
  • 3 small zucchini cut into strips
  • half a kilo of ripe tomatoes
  • 5 chopped chard or spinach leaves
  • salt and pepper
  • 1 small can of corn
  • 1 sprig of peppermint
  • 5 cups of water
  • 3 potatoes cut into strips
  • 3 pieces of a chicken (vegetarians can just leave it out)

Heat the oil and fry the onion and garlic until golden brown. Then puree the tomatoes and add them to the saucepan with the water. Add the seasoning, mint leaves, cut vegetables and pieces of chicken. Now let everything cook for about 20 minutes.

If desired, add salt at the end. This delicious vegetable soup is ready!

4. Recipe for vegetable soup

This is a French, very tasty recipe that can be served as a starter or as a main course if you are on a diet. For 6 people you need the following ingredients:

  • 2 chopped onions
  • 3 chopped knobar toes
  • 1.5 chilli peppers without seeds, cut into small pieces
  • 300 g spinach
  • 3 spoons of butter
  • Bunch of cut watercress
  • 1 liter of broth (chicken or vegetable broth, homemade or bought)
  • 1 spoonful of salt
  • 4 cups of water
  • pepper
  • 3 large, peeled and sliced ​​carrots
  • extra virgin olive oil
  • 3 chopped green onions
  • Red wine or balsamic vinegar

Roast the onion and garlic in the butter.  Then add the remaining ingredients and cook for about half an hour until the vegetables are soft.

Then puree everything and season with olive oil and vinegar.
