1. Vegan garlic soup

There are many different varieties of Spanish garlic soup. Today we introduce you to three options.

You only need very few ingredients for our first recipe. It is also suitable for vegans as we only use plant-based ingredients for it. If you are vegan yourself or have vegan friends over for dinner, this recipe is perfect. You made it quickly and it is very tasty.

Ingredients (per person)

  • 2 cloves of garlic
  • 30 g bread from the day before
  • 1/4 teaspoon paprika powder (sweet)
  • 1.5 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 1 L of water

preparation

  1. Cut the bread into cubes or thin slices and set it aside for the time being.
  2. Heat the olive oil in a pan.
  3. Peel the garlic cloves and cut them into slices. Then add them to the olive oil and fry them until golden brown.
  4. Then you add the bread and stir well so that it doesn’t burn.
  5. Now add the paprika powder and keep stirring constantly.
  6. Then you pour 1 liter of water into the pan and bring everything to a boil.
  7. Then reduce the temperature  and let everything simmer for about 10 minutes, or until the bread crumbles. 

2. Spanish garlic soup with chorizo

It is a traditional recipe, but it is higher in calories and fat.

This recipe is also quick and easy to prepare. The chorizo ​​(Spanish sausage with garlic and paprika) also makes it particularly tasty. Don’t forget, however, that this variant contains significantly more calories and is not as healthy as the first recipe. But you can safely eat it every now and then if you eat a healthy, balanced diet in general.

ingredients

  • 4 cloves of garlic
  • 120 g chorizo
  • 1 (hard) white bread from the day before
  • 130 ml milk
  • 2 eggs
  • Salt and sweet paprika to taste
  • 1 L meat stock
  • extra virgin olive oil

preparation

  1. Put the olive oil in a saucepan and heat it up.
  2. Cut the garlic and add it to the hot oil until it is light golden brown.
  3. In the meantime you cut the chorizo ​​and the bread and put both in the pan. Mix well.
  4. Then add the meat broth and bring everything to a boil. Then reduce the temperature and let the garlic soup simmer for about 10 minutes, or until the bread crumbles.
  5. Then you add the two eggs and stir everything for 5 minutes. Now you can serve and enjoy this delicious Spanish soup.

3. Spanish garlic soup with poached egg

The chicken eggs used in this recipe provide high quality protein and lots of energy! They are also characterized by essential amino acids, so it is advisable to eat several eggs a week. Incidentally, a study shows that eggs are not responsible for a higher risk of cardiovascular diseases.

  • 2 cloves of garlic
  • 3 eggs
  • 150 g bread
  • 1 L vegetable stock
  • 1 tablespoon sweet paprika
  • extra virgin olive oil
  • Salt to taste
  • Parsley at will

preparation

  1. Peel and cut the garlic cloves.
  2. Heat some oil in a saucepan and add the garlic.
  3. Cut the bread into slices and also add it to the saucepan until it is golden brown.
  4. Then add the bell pepper and stir everything well.
  5. Then pour the vegetable stock into the pot and season with salt.
  6. Bring everything to a boil for two minutes.
  7. Then you take the soup off the stove and use it to fill small bowls that are suitable for the oven.
  8. Put an egg in each bowl and place everything in the oven at 180ºC until the eggs are firm on the outside. 
  9. Serve the soup with parsley.

Further variants that provide variety

We still have a few suggestions for you, but you can also get creative yourself to adapt the soup to your taste. How about the following ingredients?

  • Garlic soup with potatoes: This will increase the nutritional value and the soup will be more filling. You can serve it as a main course!
  • This soup also tastes great with bacon. If you add bacon to the soup, don’t add salt to the soup.
